Baked Chocolate Pudding

Serves 4-6.

1 cup (135g) Self-raising flour
2 teaspoons (10ml) cocoa
¼ cup (60g, 60ml) butter
½ cup (100g) caster sugar
1 egg
½ cup (125ml) milk

½ cup (75g) brown sugar
1 tablespoon (15ml) cocoa
1¼ cups boiling water

  • Cream butter and caster sugar.
  • Add egg, mix well
  • Add flour & cocoa, mix well
  • Stir in milk gradually, mixing
  • Pour into pie dish or other ceramic baking container
  • Combine brown sugar and cocoa for sauce. Sprinkle top of mixture in dish, and pour boiling water gently over all this.
  • Bake at 190°C (375°F) for 45 minutes
  • Serve with custard sauce, cream or ice cream
