Apple Cake

This recipe is adapted from a CWA Victoria Cookbook recipe

Ingredients

• ½kg Granny Smith apples
• 125g butter
• 125g castor sugar
• 125g plain flour
• 1 egg
• 60g castor sugar
• 1 teaspoon cinnamon
• 1 tablespoon lemon juice
• OPTIONAL: 60g chopped raisins or sultanas
• OPTIONAL: 60g chopped nuts (walnuts or almonds)
• OPTIONAL: 1 tspn ground ginger

Method

• Grease 18cm round cake tin and line base with greased paper or foil.
• Heat over to 190°C.
• Peel apples and slice thinly, place in bowl and sprinkle with lemon juice.
• Melt butter in saucepan, remove from heat and mix in castor sugar, then flour and finally egg.
• Spread half the batter on the base of the cake tin, then half the apples, half the brown sugar and half the nuts (OPTIONAL), dried fruit and spices.
• Add the other half of the apples, then dried fruit, spices and sugar. Then add the other half of the batter and nuts (OPTIONAL).
• Cook for about 1½ hours.
• Serve hot or cold with good double cream or yoghurt. If serving cold, leave in tin until cake is set.
